Soft and high-protein Cinnamon Apple Cottage Cheese Bites perfect for healthy snacks or breakfast.
Ingredients
1 cup cottage cheese
1 cup rolled oats
1/2 cup applesauce or grated apple
1 egg
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons maple syrup
1/2 teaspoon vanilla
1/2 teaspoon baking powder
Pinch salt
Instructions
1. Preheat oven to 350°F.
2. Blend cottage cheese, egg, applesauce, maple syrup, and vanilla.
3. Stir in oats, cinnamon, nutmeg, baking powder, and salt.
4. Scoop into mini muffin tin.
5. Bake 15–18 minutes.
6. Cool before removing.
Notes
Do not overbake.
Store refrigerated.
