Ingredients

1 cup finely shredded zucchini (moisture lightly squeezed out)

½ cup dark chocolate chips or chopped chocolate

¾ cup plain Greek yogurt

¼ cup melted coconut oil or unsalted butter

⅓ cup honey or maple syrup

2 large eggs

1 tsp vanilla extract

¾ cup almond flour (or all-purpose flour)

⅓ cup unsweetened cocoa powder

1 tsp baking soda

¼ tsp salt


Instructions

1. Shred zucchini and lightly squeeze out excess water.

2. Melt chocolate until smooth.

3. Whisk yogurt, oil, honey, eggs, and vanilla together.

4. Stir in melted chocolate, then add dry ingredients.

5. Fold in zucchini and pour batter into baking pan.

6. Bake at 350°F for 25–30 minutes until set.

Notes
