Description
Moist, fudgy chocolate protein scones made with cottage cheese. Brownie-like texture with 8.7g protein each.
Ingredients
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1/2 cup chocolate protein powder
1/3 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup cottage cheese, blended
1/4 cup melted butter
1 large egg
2 tsp vanilla extract
1/2 cup chocolate chips
Instructions
1. Preheat oven to 400°F and line baking sheet.
2. Blend cottage cheese smooth.
3. Mix dry ingredients.
4. Mix wet ingredients.
5. Combine gently; fold in chocolate chips.
6. Shape into circle; slice into 8 wedges.
7. Bake 14–17 minutes.
Notes
Chill dough for taller scones.
Add protein powder slowly if dough is too wet.
