Description
These chocolate espresso cookies are intensely rich and chocolatey with perfectly crisp edges. Espresso powder enhances the chocolate flavor creating a bakery style cookie.
Ingredients
1 cup all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon espresso powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter melted
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup dark chocolate chips
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a bowl whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
3. In another bowl mix melted butter, brown sugar, and granulated sugar until smooth.
4. Add egg and vanilla extract and whisk until combined.
5. Gradually mix dry ingredients into wet ingredients until dough forms.
6. Fold in chocolate chips.
7. Scoop dough balls onto the baking sheet.
8. Bake for 10 to 12 minutes until edges are set.
9. Allow cookies to cool before serving.
Notes
Use high quality cocoa powder for best flavor.
Chill dough for thicker cookies.
Add flaky sea salt on top after baking.
