Soft chocolate chip cottage cheese scones packed with protein and perfect for breakfast or snacks.
Ingredients
1 cup cottage cheese
1 large egg
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
4 tablespoons cold unsalted butter
1/2 cup chocolate chips
Instructions
1. Preheat oven to 375°F (190°C) and line baking sheet.
2. Whisk cottage cheese, egg, sweetener, and vanilla.
3. Mix flour, baking powder, and salt.
4. Cut butter into dry ingredients.
5. Combine wet and dry ingredients and fold in chocolate chips.
6. Shape dough into disk and cut into wedges.
7. Bake 18–22 minutes until lightly golden.
Notes
Use cold butter for flaky scones.
Blend cottage cheese for smoother texture.
Do not overmix dough.
