Description
Just like Grandma used to make — only chewier! These soft and chewy peanut butter cookies are rich, buttery, and perfectly balanced between sweet and salty.
Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
1 large egg + 1 yolk
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
Instructions
1. Beat butter and sugars until fluffy.
2. Mix in peanut butter and vanilla.
3. Add egg and yolk.
4. Whisk dry ingredients and fold in.
5. Chill dough for 30 minutes.
6. Scoop and bake at 350°F for 9–11 minutes.
7. Cool before serving.
Notes
For an extra chewy texture, chill your dough and don’t overbake! Store in an airtight container with a slice of bread to keep soft.
