These Thick & Chewy Peanut Butter Banana Oat Bars are a wholesome snack made with ripe bananas, oats, and creamy peanut butter. Naturally sweetened, kid-friendly, and perfect for meal prep.
Ingredients
2 ripe bananas, mashed
½ cup peanut butter (unsweetened)
¼ cup honey or maple syrup
1 teaspoon vanilla extract
1 ½ cups rolled oats
½ teaspoon cinnamon
¼ teaspoon salt
½ teaspoon baking powder
½ cup chocolate chips or chopped nuts (optional)
Instructions
1. Mash bananas in a mixing bowl until smooth.
2. Stir in peanut butter, honey or maple syrup, and vanilla extract until creamy.
3. Mix in oats, cinnamon, salt, and baking powder until combined.
4. Fold in chocolate chips or nuts if desired.
5. Spread mixture into a parchment-lined 8×8 pan.
6. Bake at 350°F (175°C) for 20–25 minutes until golden and set.
7. Cool completely before slicing into bars.
Notes
For a vegan version, use maple syrup instead of honey.
Store in the fridge for up to 5 days or freeze for up to 2 months.
