2 large eggs, room temperature

2 teaspoons vanilla extract

2 cups quick-cooking oats

1 cup raisins
Instructions

Preheat your oven to 350°F and line a 9×9 inch pan with parchment paper. Grease lightly.

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

In a large bowl, cream butter and brown sugar until light and fluffy—about 2 minutes.

Add eggs one at a time, then mix in vanilla extract.

Gradually stir in the dry ingredients until just combined.

Fold in oats and raisins until evenly distributed.

Spread the batter into the prepared pan and smooth the top.
