Description

Chewy, cinnamon-kissed Oatmeal Raisin Cookie Bars packed with oats and plump raisins. These easy bars are a nostalgic hug in dessert form—bake once, slice up, and savor all week!


Ingredients

  •  cups all-purpose flour

  • 1 teaspoon baking soda

  • ¾ teaspoon ground cinnamon

  • ½ teaspoon fine salt

  • ¾ cup unsalted butter, room temperature

  • ¾ cup packed light brown sugar

  • 2 large eggs, room temperature

  • 2 teaspoons vanilla extract

  • 2 cups quick-cooking oats

  • 1 cup raisins


Instructions

  • Preheat your oven to 350°F and line a 9×9 inch pan with parchment paper. Grease lightly.

  • In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.

  • In a large bowl, cream butter and brown sugar until light and fluffy—about 2 minutes.

  • Add eggs one at a time, then mix in vanilla extract.

  • Gradually stir in the dry ingredients until just combined.

  • Fold in oats and raisins until evenly distributed.

  • Spread the batter into the prepared pan and smooth the top.

  • Bake for 18–22 minutes or until the edges are golden and the center is just set.

  • Let cool for at least 10 minutes before slicing into bars.

Notes

  • Want extra chew? Use old-fashioned oats and let them soak a few minutes in the batter before baking.

  • Add chopped walnuts or chocolate chips for an exciting twist.

  • These freeze beautifully! Just wrap each bar and store in a freezer bag.
