Description

Soft and chewy oatmeal pecan cookies made with rolled oats, brown sugar, and warm cinnamon.


Ingredients

Scale

1 cup all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 tsp vanilla extract

2 large eggs

3 cups rolled oats

1 cup chopped pecans


Instructions

1. Preheat oven to 350°F and line baking sheets.

2. Whisk flour, baking soda, salt, and cinnamon.

3. Cream butter and sugars until fluffy.

4. Add eggs and vanilla.

5. Mix in dry ingredients.

6. Stir in oats and pecans.

7. Scoop dough onto baking sheets.

8. Bake 10–12 minutes.

9. Cool before serving.

Notes

Do not overbake.

Chill dough for thicker cookies.

Toasting pecans enhances flavor.
