Cherry Ricotta Almond Bars that are soft, creamy, and bursting with fruity flavor. Perfect for sharing.
Ingredients
1 cup ricotta cheese
1/2 cup almond flour
3/4 cup all-purpose flour
1/2 cup sugar
1/4 cup butter
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon baking powder
1/4 teaspoon salt
1 cup cherries
Powdered sugar
Instructions
1. Preheat oven to 350°F.
2. Cream butter and sugar.
3. Add ricotta, eggs, and extracts.
4. Mix in dry ingredients.
5. Fold in cherries.
6. Bake 30–35 minutes.
7. Cool and slice.
Notes
Use full-fat ricotta.
Do not overmix.
Cool before cutting.
Optional almond topping.
