Description
Soft and moist carrot honey yogurt breakfast loaf that is lightly sweet and perfect for breakfast or coffee.
Ingredients
2 eggs
1/3 cup honey
1/4 cup sugar
1/3 cup oil
1/2 cup yogurt
1 cup grated carrots
1 3/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
Pinch of salt
Instructions
1. Preheat oven to 180C and prepare loaf pan
2. Whisk eggs, honey, sugar, oil and yogurt
3. Stir in grated carrots
4. Mix flour, baking powder, baking soda, cinnamon and salt
5. Combine wet and dry ingredients
6. Pour into loaf pan
7. Bake 40-50 minutes
8. Cool and glaze before serving
Notes
Use finely grated carrots
Do not overmix batter
Loaf tastes better next day
