Description
Healthy high-protein carrot cake muffins made with oats, cottage cheese, bananas and carrots.
Ingredients
1 cup cottage cheese blended
2 eggs
2 ripe bananas mashed
1 1/2 cups rolled oats
1 cup grated carrots
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder
pinch salt
1/4 cup walnuts optional
1/4 cup raisins optional
Instructions
1. Preheat oven to 350°F and line muffin tin
2. Blend cottage cheese eggs bananas and vanilla
3. Add oats and blend until coarse flour forms
4. Stir in carrots cinnamon baking powder and salt
5. Fold in optional walnuts or raisins
6. Fill muffin cups evenly
7. Bake 20 to 25 minutes until set
8. Cool before serving
Notes
Use ripe bananas for sweetness
Blend cottage cheese smooth
Store muffins in refrigerator
