Ingredients
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3/4 cup oil
3/4 cup brown sugar
1/2 cup sugar
3 eggs
2 cups grated carrots
1/2 cup crushed pineapple
1/2 cup walnuts
16 oz cream cheese
1/2 cup sugar
2 eggs
1 tsp vanilla
1/4 cup sour cream
8 oz cream cheese
1/2 cup powdered sugar
1 tsp vanilla
1 cup whipped cream
Instructions
1. Prepare cheesecake batter and bake
2. Prepare carrot cake batter
3. Bake carrot cake layers
4. Cool all layers
5. Assemble cake layers
6. Prepare whipped cream cheese frosting
7. Frost cake and chill before serving
Notes
Chill cheesecake before assembling
Use finely grated carrots
Do not overbake cheesecake
Chill cake before slicing
