Description

A moist and naturally sweet Healthy Carrot and Mandarin Cake made with ground almonds, fresh citrus, and no flour or refined sugar. Perfect for a light dessert or nutritious snack.


Ingredients

Scale

4 eggs

250 g finely grated carrot

2 mandarins (juice and zest)

200 g ground almonds


Instructions

1. Preheat oven to 170°C (340°F) and prepare a 20–22 cm cake pan.

2. Beat eggs until slightly frothy.

3. Add mandarin juice and zest and mix well.

4. Fold in grated carrots.

5. Gently stir in ground almonds until combined.

6. Pour batter into pan and bake for 35–45 minutes.

7. Cool completely before slicing or adding optional glaze.

Notes

Use finely grated carrots for best texture.

Do not overbake to keep the cake moist.

Store in refrigerator if adding yogurt glaze.
