Description

Made with a simple yellow cake mix, rich sour cream, and a buttery brown sugar streusel, it’s the perfect shortcut to homemade goodness. For the Cake:

  • 1 box yellow cake mix
  • 1 cup sour cream
  • 4 large eggs
  • ½ cup vegetable oil

For the Cinnamon Streusel:

  • 1 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • ½ cup chopped pecans (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray.
  • In a large bowl, mix together the cake mix, sour cream, eggs, and vegetable oil until smooth. Set aside.
  • In a separate bowl, mix the brown sugar, cinnamon, and pecans to make the streusel.
  • Pour half of the cake batter into the prepared baking dish. Sprinkle half of the streusel over the batter. Add the remaining batter on top, then finish with the rest of the streusel.
  • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake cools, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
  • Drizzle the glaze over the slightly warm coffee cake, slice, and enjoy!

Notes

  • For a crunchier streusel, add an extra 2 tablespoons of butter.
  • Swap sour cream with Greek yogurt or buttermilk for a slightly different texture.
  • If you prefer a thicker glaze, add more powdered sugar; for a thinner glaze, add more milk.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
