Soft, chewy, vegan, gluten-free Blueberry Oat Bars packed with juicy berries and wholesome oats — your new favorite healthy snack.
Ingredients
2 cups rolled oats
1 cup oat flour
1/2 cup almond butter
1/2 cup maple syrup
1/4 cup coconut oil
1 tsp vanilla extract
1 1/2 cups blueberries
1 tbsp cornstarch
1 tbsp lemon juice
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
2. Mix oats, oat flour, and salt.
3. Whisk almond butter, coconut oil, maple syrup, and vanilla.
4. Combine wet and dry mixtures to form dough.
5. Press 2/3 into pan, top with blueberries mixed with cornstarch and lemon juice.
6. Sprinkle remaining dough over top.
7. Bake 30 minutes until golden.
8. Cool completely before slicing.
Notes
Store bars in an airtight container for up to 1 week or freeze up to 3 months.
Use frozen blueberries directly without thawing.
