These Blueberry Lemon Cottage Cheese Breakfast Cookies are soft, naturally sweetened, and packed with oats, blueberries, and fresh lemon.
Ingredients
1 cup cottage cheese
1 cup rolled oats
1 cup fresh blueberries
1/4 cup honey
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F and line baking sheet
2. Mash or blend cottage cheese until smooth
3. Stir in honey, lemon juice, zest, and vanilla
4. Mix in oats, baking powder, cinnamon, and salt
5. Fold in blueberries gently
6. Scoop and flatten dough onto baking sheet
7. Bake 18–22 minutes until set
8. Cool before serving
Notes
Use full-fat cottage cheese for best texture
Do not overbake to keep cookies soft
