Description
A soft blueberry coffee cake layered with creamy cheesecake filling and topped with buttery crumb topping.
Ingredients
2 cups flour
1 cup sugar
1/2 cup butter
2 eggs
1/2 cup milk
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
8 oz cream cheese
1/3 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups blueberries
1 tbsp flour
1/2 cup flour
1/3 cup brown sugar
1/4 cup butter
1/2 tsp cinnamon
Instructions
1. Preheat oven to 350°F and grease baking pan
2. Cream butter and sugar then add eggs and vanilla
3. Mix dry ingredients and combine with wet ingredients alternating milk
4. Prepare cream cheese mixture
5. Layer batter cream cheese blueberries and remaining batter
6. Add crumb topping
7. Bake 40-45 minutes until golden
Notes
Toss blueberries in flour to prevent sinking
Use room temperature cream cheese
Let cake cool slightly before slicing
