Ingredients
1 cup cottage cheese
1 cup rolled oats
1/2 cup unsweetened applesauce
1/2 cup blueberries
1/2 teaspoon vanilla extract
1 teaspoon baking powder
2 tablespoons honey or maple syrup
1 large egg
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F and prepare muffin tin
2. Blend cottage cheese, oats, applesauce, honey, egg, vanilla, baking powder, and salt
3. Fold blueberries into batter
4. Divide batter into muffin cups
5. Bake 18–22 minutes until set
6. Cool slightly before serving
