Description
These Banana Oat Cottage Cheese Pancake Bites are naturally sweet, soft, and high in protein. Perfect for meal prep, breakfast, or snacking on-the-go.
Ingredients
1 cup cottage cheese
2 large eggs
1 ripe banana, mashed
1 cup rolled oats (or oat flour)
1 tsp vanilla extract
1 tsp baking powder
Pinch of cinnamon (optional)
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
2. Blend cottage cheese, eggs, banana, and vanilla until smooth.
3. Stir in oats, baking powder, cinnamon, and salt until combined.
4. Fill muffin tin cups about ¾ full.
5. Bake 15–18 minutes until golden and set.
6. Cool before removing and enjoy.
Notes
Store in fridge up to 5 days or freeze up to 2 months. Add chocolate chips, blueberries, or nut butter for variations.
