Description

Moist and fluffy banana oat coffee cake bites with cinnamon warmth. Naturally sweetened and perfect for busy mornings.


Ingredients

Scale

2 ripe bananas, mashed

2 cups rolled oats

1/2 cup Greek yogurt

2 eggs

1/4 cup honey or maple syrup

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon salt

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F and prepare mini muffin tin.

2. Mash bananas and mix with yogurt, eggs, honey, and vanilla.

3. Stir in oats, baking powder, baking soda, cinnamon, and salt.

4. Fill muffin wells 3/4 full.

5. Bake 12–15 minutes until set.

Notes

Use ripe bananas for sweetness.

Do not overbake.

Cool slightly before removing from pan.
