Ingredients
½ cup cottage cheese
1 ripe banana, mashed
1 large egg
2 tbsp almond flour
1 tbsp oat flour
1 tsp baking powder
¼ tsp cinnamon
2 tbsp chopped walnuts or pecans
1 tsp vanilla extract
Instructions
1. Mash the ripe banana in a microwave-safe mug.
2. Stir in cottage cheese, egg, and vanilla extract.
3. Add almond flour, oat flour, baking powder, and cinnamon. Mix until combined.
4. Fold in walnuts or pecans.
5. Microwave on high for 2–3 minutes until set.
