Description

Healthy Banana Muffins made with yogurt, whole wheat flour, and maple syrup. These one-bowl muffins are moist, fluffy, naturally sweetened, and perfect for breakfast or snacks.


Ingredients

Scale

3 ripe bananas

ยฝ cup Greek yogurt

โ…“ cup maple syrup

2 eggs

1 teaspoon vanilla extract

1ยฝ cups whole wheat flour

1 teaspoon baking soda

ยฝ teaspoon baking powder

ยฝ teaspoon salt

ยฝ teaspoon cinnamon

Optional: chocolate chips or walnuts


Instructions

1. Preheat oven to 350ยฐF.

2. Mash bananas.

3. Add yogurt, maple syrup, eggs, and vanilla.

4. Mix in flour, baking soda, baking powder, salt, and cinnamon.

5. Fold gently.

6. Divide into muffin tin.

7. Bake 18-22 minutes.

8. Cool before serving.

Notes

Use ripe bananas.

Do not overmix.

Store airtight up to 5 days.

Freeze up to 2 months.
