Description
A moist banana loaf enriched with cream cheese for a soft, rich crumb perfect for brunch or coffee.
Ingredients
4 oz cream cheese softened
2 ripe bananas mashed
2 eggs
1/2 cup sugar
1/3 cup vegetable oil or melted butter
1/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional 1/2 cup walnuts or chocolate chips
Instructions
1. Preheat oven to 350°F and line a loaf pan with parchment paper.
2. Beat cream cheese until smooth.
3. Add mashed bananas and eggs and mix well.
4. Stir in sugar, oil, milk and vanilla extract.
5. In another bowl mix flour, baking powder, baking soda and salt.
6. Fold dry ingredients into wet mixture until just combined.
7. Stir in walnuts or chocolate chips if using.
8. Pour batter into loaf pan.
9. Bake for 50 to 60 minutes until toothpick comes out clean.
10. Cool before slicing.
Notes
Use very ripe bananas for best flavor.
Do not overmix the batter.
Allow loaf to cool before slicing.
