Description
Soft banana cottage cheese muffins made with whole wheat flour. Naturally sweet, moist, and high in protein.
Ingredients
2 ripe bananas, mashed
1 cup cottage cheese
1 cup whole wheat flour
1/2 tsp baking soda
1 large egg
2 tbsp honey or maple syrup
1 tbsp neutral oil
1 tsp vanilla extract
1/4 tsp salt
1/2 tsp ground cinnamon
Instructions
1. Preheat oven to 350°F and line a muffin tin.
2. Blend cottage cheese until smooth (optional).
3. Mash bananas and mix with wet ingredients.
4. Stir in dry ingredients until just combined.
5. Divide batter into muffin cups.
6. Bake 18–22 minutes until set.
7. Cool before serving.
Notes
Use very ripe bananas for best sweetness.
Blend cottage cheese for smoother texture.
Do not overmix batter.
