Description
A wholesome banana cinnamon oat breakfast bake that tastes like banana bread and is perfect for meal prep.
Ingredients
2 ripe bananas mashed
2 eggs
2 cups rolled oats
1/3 cup honey or maple syrup
1 tsp cinnamon
1 tsp baking powder
pinch salt
1 cup milk
1 tsp vanilla extract
Instructions
1. Preheat oven to 180°C and grease baking dish
2. Mash bananas in mixing bowl
3. Whisk in eggs and honey or maple syrup
4. Add oats cinnamon baking powder and salt
5. Pour in milk and mix until combined
6. Spread mixture in baking dish
7. Bake 30 to 35 minutes until set
8. Cool slightly then slice into squares
Notes
Use very ripe bananas
Let bake cool before slicing
Add berries or nuts if desired
