Healthy Banana Cinnamon Greek Yogurt Breakfast Muffins are soft, naturally sweetened muffins made with oat flour, ripe bananas, and Greek yogurt for a nourishing morning bake.
Ingredients
2 ripe bananas, mashed
ยฝ cup Greek yogurt
ยผ cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup oat flour
ยฝ teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350ยฐF and prepare muffin tin.
2. Mash bananas and mix with yogurt, honey, egg, and vanilla.
3. Stir in cinnamon, oat flour, baking powder, and salt.
4. Divide batter into muffin cups.
5. Bake 18โ22 minutes.
6. Cool before serving.
Notes
Use ripe bananas.
Do not overmix.
