Description
A wholesome baked oatmeal made with ripe bananas, juicy blueberries, and warm cinnamon—perfect for breakfast or brunch.
Ingredients
2 ripe bananas, mashed
1 cup blueberries
2 cups rolled oats
1 cup milk
1 egg
1 tsp cinnamon
1 tbsp honey (optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8 baking dish.
2. Mash bananas in a large bowl.
3. Whisk in milk, egg, honey, and cinnamon.
4. Stir in oats until well coated.
5. Gently fold in blueberries.
6. Pour mixture into baking dish and bake 30–35 minutes.
7. Cool slightly before serving.
Notes
For vegan: use flax egg and plant milk.
Use frozen blueberries straight from the freezer to avoid extra liquid.
Store in fridge up to 4 days or freeze slices for 3 months.
