Fresh and light Baked Lemon Blueberry Cottage Cheese Squares packed with protein, naturally sweetened, and perfect for breakfast or snack.
Ingredients
2 cups cottage cheese
1 cup blueberries
1/2 cup rolled oats
1/4 cup honey
2 large eggs
1/4 cup lemon juice
1 tablespoon lemon zest
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F and line an 8×8 pan.
2. Blend cottage cheese, eggs, honey, lemon juice, zest, and vanilla until smooth.
3. Stir in oats, baking powder, salt, and cinnamon.
4. Fold in blueberries gently.
5. Pour into pan and bake 30–35 minutes until set.
6. Cool completely before slicing into 8 squares.
Notes
Blend cottage cheese for smoother texture.
Do not overbake.
Refrigerate for best texture before serving.
