These Baked Cottage Cheese Protein Brownie Bites are perfectly fudgy, rich, and naturally sweetened with honey. The cottage cheese adds creaminess and high-quality protein, making these bite-sized brownies a wholesome snack for kids and adults alike. They’re gluten-free, high-protein, and made with simple ingredients you probably already have in your kitchen.
Ingredients
1 cup cottage cheese (full-fat or low-fat)
1/2 cup almond flour (or any nut flour)
1/4 cup unsweetened cocoa powder
2 large eggs
1/4 cup pure honey (or maple syrup)
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
Optional: 2 tablespoons mini chocolate chips
Instructions
1. Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners or lightly grease it.
2. Add cottage cheese, eggs, honey, and vanilla extract to a blender. Blend until completely smooth.
3. Pour the blended mixture into a bowl and stir in almond flour, cocoa powder, baking powder, and salt until a thick batter forms.
4. Fold in mini chocolate chips if using.
5. Scoop the batter into the mini muffin wells, filling each about 3/4 full.
6. Bake for 12–16 minutes, or until the edges are set and the centers are slightly soft for a fudgy texture.
7. Allow the brownie bites to cool for at least 10 minutes before removing from the pan.
Notes
Use silicone molds for the easiest release.
Chill the brownie bites in the fridge for a dense, extra-fudgy texture.
If you like a sweeter brownie, add an additional tablespoon of honey.
Store in the refrigerator for up to 6 days or freeze for up to 3 months.
