These Apple Pie Cottage Cheese Scones are soft, cinnamon-spiced, and packed with protein! Made with wholesome oats, cottage cheese, and maple syrup for the perfect cozy fall breakfast.
Ingredients
1 cup almond flour
¾ cup oat flour (gluten-free if needed)
1 ½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
½ cup cottage cheese
1 large egg
3 tbsp maple syrup
2 tbsp olive oil or melted butter
1 tsp vanilla extract
¾ cup finely chopped apple
1 tbsp milk (if needed)
Optional glaze: 2 tbsp Greek yogurt + 1 tsp maple syrup + pinch cinnamon
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Whisk together almond flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In another bowl, whisk cottage cheese, egg, maple syrup, olive oil, and vanilla.
4. Combine wet and dry ingredients; stir until dough forms.
5. Fold in chopped apples and mix gently.
6. Shape dough into a circle, cut into 8 wedges, and place on baking sheet.
7. Bake for 18–20 minutes, until golden and firm at edges.
8. Cool and drizzle with yogurt-maple glaze before serving.
Notes
Use small apple pieces for even baking.
