Wholesome, protein-packed muffins made with apples, peanut butter, Greek yogurt, and warm cinnamon spice. Perfect for breakfast or snacks!
Ingredients
½ cup Greek yogurt
½ cup peanut butter
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
½ teaspoon baking powder
1 teaspoon cinnamon
½ cup apple chunks
Instructions
1. Preheat oven to 350°F and prepare muffin tin.
2. Whisk together Greek yogurt, peanut butter, honey, egg, and vanilla.
3. Fold in oat flour, baking powder, and cinnamon.
4. Stir in diced apples.
5. Fill muffin cups and bake 18–22 minutes.
6. Cool before serving.
