Description
Soft apple coffee cake muffins flavored with cinnamon and topped with brown sugar.
Ingredients
1 cup all purpose flour
1/2 cup sugar
1 tsp baking powder
1 egg
1/2 cup milk
1 tsp cinnamon
1 cup chopped apples
1/4 cup brown sugar
Instructions
1. Preheat oven to 350°F
2. Mix flour sugar baking powder and cinnamon
3. Add egg and milk and stir until combined
4. Fold in chopped apples
5. Fill muffin cups three quarters full
6. Sprinkle brown sugar on top
7. Bake 18 to 22 minutes until golden
Notes
Use firm apples like Honeycrisp or Fuji
Do not overmix the batter
