This Amish Apple Fritter Breakfast Cake is soft, cinnamon-spiced, and loaded with tender apples, then finished with a sweet vanilla glaze.
Ingredients
2 cups flour
1 cup sugar
2 eggs
1/2 cup milk
2 apples peeled and chopped
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup melted butter
1 teaspoon vanilla extract
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F and grease a baking pan
2. Whisk flour, cinnamon, baking powder, and salt
3. Mix sugar, eggs, milk, butter, and vanilla
4. Combine wet and dry ingredients
5. Fold in apples
6. Pour into pan and bake 35-40 minutes
7. Mix glaze ingredients and drizzle over warm cake
