Ingredients
1 cup cottage cheese (full-fat or low-fat)
2 large eggs
1/2 cup unsweetened cocoa powder
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
Optional: pinch of salt
Optional: 1/3 cup chocolate chips
Instructions
1. Preheat oven to 350°F and line an 8×8 pan with parchment.
2. Add cottage cheese, eggs, honey, cocoa powder, and vanilla to a blender.
3. Blend until smooth and creamy.
4. Fold in chocolate chips if using.
5. Pour batter into the pan and smooth the top.
6. Bake 20–25 minutes, keeping the center slightly underbaked for fudginess.
7. Cool completely before slicing.
Notes
Use full-fat cottage cheese for extra richness. For deeper chocolate flavor, add 1 teaspoon espresso powder. Store in refrigerator for up to 6 days or freeze for 3 months.
