Description

Soft and buttery almond muffins made with almond flour and topped with sliced almonds. Perfect for breakfast or coffee.


Ingredients

Scale

1 cup all-purpose flour

1/2 cup almond flour

1/2 cup sugar

1 tbsp baking powder

1/4 tsp salt

1/2 cup melted butter

2 eggs

1 tsp vanilla

1/2 cup milk

1/2 cup sliced almonds


Instructions

1. Preheat oven to 180C and line muffin tin

2. Mix flour, almond flour, sugar, baking powder and salt

3. Whisk melted butter, eggs, vanilla and milk

4. Combine wet and dry ingredients

5. Fill muffin cups 3/4 full

6. Top with sliced almonds

7. Bake 18-22 minutes

8. Cool on rack

9. Dust with powdered sugar

Notes

Do not overmix batter

Use almond milk for stronger flavor

Sprinkle sugar on top before baking
