Description

A moist, naturally sweetened Almond Flour Orange Cake bursting with fresh citrus flavor. This gluten-free and dairy-free treat is perfect for brunch or dessert, with a tender crumb and nutty aroma thatโ€™s hard to resist!


Ingredients

  • 2 ยฝ cups almond flour

  • 1 tsp baking powder

  • ยผ tsp salt

  • 4 large eggs

  • ยฝ cup honey or maple syrup

  • 1/3 cup olive oil or coconut oil

  • 2 tsp vanilla extract

  • Zest and juice of 1 large orange

  • ยผ cup sliced almonds (optional, for topping)


Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Line a 9-inch round cake pan with parchment paper and lightly grease the sides.

  • In a medium bowl, whisk together almond flour, baking powder, and salt.

  • In a large bowl, beat the eggs. Add honey or maple syrup, olive oil or coconut oil, vanilla extract, orange zest, and juice. Mix until well blended.

  • Add the dry ingredients to the wet mixture, stirring just until combined.

  • Pour the batter into the prepared cake pan. Smooth the top and sprinkle sliced almonds if using.

  • Bake for 35โ€“40 minutes or until a toothpick inserted in the center comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • For a deeper citrus flavor, you can add a bit of orange extract.

  • Coconut oil adds a tropical note; use olive oil for a more earthy, rustic finish.
