Ingredients

ยฝ cup honey or maple syrup

1/3 cup olive oil or coconut oil

2 tsp vanilla extract

Zest and juice of 1 large orange

Instructions

Preheat oven to 350ยฐF (175ยฐC). Line a 9-inch round cake pan with parchment paper and lightly grease the sides.

In a medium bowl, whisk together almond flour, baking powder, and salt.

In a large bowl, beat the eggs. Add honey or maple syrup, olive oil or coconut oil, vanilla extract, orange zest, and juice. Mix until well blended.

Add the dry ingredients to the wet mixture, stirring just until combined.

Pour the batter into the prepared cake pan. Smooth the top and sprinkle sliced almonds if using.
