Ingredients

2 cups almond flour

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp salt

2 large eggs

½ cup coconut sugar

¼ cup coconut oil, melted

1 tsp vanilla extract

2 cups peeled and diced apples
Instructions

Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.

In a bowl, whisk almond flour, baking soda, cinnamon, and salt.

In another bowl, beat eggs, coconut sugar, melted coconut oil, and vanilla until combined.

Stir dry ingredients into wet, then fold in apples.

Pour into prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean.

Let cool in pan 10 minutes, then transfer to a rack to finish cooling.
