Ingredients

  • 2 cups almond flour

  • ½ tsp baking soda

  • ½ tsp ground cinnamon

  • ¼ tsp salt

  • 2 large eggs

  • ½ cup coconut sugar

  • ¼ cup coconut oil, melted

  • 1 tsp vanilla extract

  • 2 cups peeled and diced apples


Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.

  • In a bowl, whisk almond flour, baking soda, cinnamon, and salt.

  • In another bowl, beat eggs, coconut sugar, melted coconut oil, and vanilla until combined.

  • Stir dry ingredients into wet, then fold in apples.

  • Pour into prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean.

  • Let cool in pan 10 minutes, then transfer to a rack to finish cooling.

Notes

  • Use firm, tart apples like Honeycrisp or Granny Smith

  • For added texture, mix in walnuts or pecans
