These Almond Cloud Cookies are light, sweet, and naturally gluten-free, made with almond flour and whipped egg whites for a tender, chewy bite perfect for tea time!
Ingredients

1½ cups almond flour

1 cup granulated sugar

3 large egg whites

1 tsp almond extract

½ tsp vanilla extract or lemon zest (optional)
Instructions

Preheat oven to 325°F. Line two baking sheets with parchment paper.

Beat egg whites to soft peaks.

Fold in almond flour, sugar, almond extract, and optional flavorings.

Drop tablespoons of dough onto baking sheets.

Bake 18–20 minutes until lightly golden.

Cool completely on the tray.
Notes
Beat whites just until soft peaks form. Cool fully for best texture. Add lemon zest for a bright flavor twist.
