Description

These 5-Minute Cottage Cheese Biscuits are fluffy, buttery, and protein-packed. Perfect for breakfast, brunch, or dinner — ready in minutes with simple ingredients and an old-fashioned Southern twist.

Ingredients

Scale

1 cup all-purpose flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 tbsp sugar (optional for sweet version)

¾ cup small-curd cottage cheese

2 tbsp melted butter (plus extra for brushing)

1 large egg

2 tbsp milk or buttermilk

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

3. Add cottage cheese, melted butter, egg, and milk. Stir until just combined — do not overmix.

4. Drop heaping spoonfuls of dough onto the baking sheet, spacing them 2 inches apart.

5. Brush the tops with a little melted butter for a golden finish.

6. Bake for 10–12 minutes, or until tops are lightly golden and edges crisp.

7. Serve warm with butter, honey, or your favorite jam.

Notes

For savory biscuits, mix in shredded cheddar cheese and chopped chives.

For a slightly tangier flavor, use buttermilk instead of regular milk.

To make ahead: prepare the dough and refrigerate for up to 24 hours.

Freeze baked biscuits for up to 2 months; reheat in oven at 350°F for 5–6 minutes.

Small-curd cottage cheese works best for a smoother biscuit texture.
