Ingredients
1 cup all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tbsp sugar (optional for sweet version)
¾ cup small-curd cottage cheese
2 tbsp melted butter (plus extra for brushing)
1 large egg
2 tbsp milk or buttermilk
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
3. Add cottage cheese, melted butter, egg, and milk. Stir until just combined — do not overmix.
4. Drop heaping spoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
5. Brush the tops with a little melted butter for a golden finish.
6. Bake for 10–12 minutes, or until tops are lightly golden and edges crisp.
