Soft and fluffy banana chocolate chip cup cake made with just 4 ingredients and cooked in the microwave in 2 minutes.
Ingredients
1 ripe banana mashed
1 egg
3 tablespoons oat flour
2 tablespoons chocolate chips
Instructions
1. Mash banana in a microwave safe mug until smooth
2. Add egg and whisk until combined
3. Stir in oat flour until batter forms
4. Fold in chocolate chips
5. Microwave for 1 minute 30 seconds to 2 minutes
6. Let cool slightly and enjoy warm
Notes
Use very ripe bananas for natural sweetness
Do not overcook or the cake may become rubbery
Add extra chocolate chips in the center for a gooey middle
