Description

This 3 ingredient blueberry oat breakfast cake is soft, naturally sweet, and packed with juicy blueberries. A healthy baked oatmeal recipe perfect for quick breakfasts or snacks.


Ingredients

2 ripe bananas mashed

2 cups rolled oats

1 cup blueberries


Instructions

1. Preheat oven to 350°F and line an 8×8 baking dish with parchment paper.

2. Mash the bananas in a mixing bowl until mostly smooth.

3. Stir in rolled oats until fully combined.

4. Fold in the blueberries gently.

5. Spread the mixture evenly into the prepared baking dish.

6. Bake for 25 minutes until the edges are golden and the center is set.

7. Allow to cool for 10 minutes before slicing and serving.

Notes

Use very ripe bananas for best sweetness.

Frozen blueberries can be used directly from the freezer.

Store leftovers in the refrigerator for up to 5 days.
