A soft, naturally sweet, 2-ingredient banana cake thatโs gluten-free, flourless, and ready in under 30 minutes. The easiest healthy dessert or snack youโll ever make.
Ingredients
2 large ripe bananas (mashed)
2 large eggs
ยฝ tsp vanilla extract (optional)
ยผ tsp cinnamon (optional)
Mini chocolate chips or chopped nuts (optional)
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and grease or line an 8ร8 inch baking pan.
2. Mash the bananas in a bowl until mostly smooth.
3. Whisk in the eggs until the mixture is light and consistent.
4. Fold in optional vanilla, cinnamon, or chocolate chips if using.
5. Pour the mixture into the prepared pan and spread evenly.
6. Bake for 20โ25 minutes or until the top is set and a toothpick comes out clean.
7. Let cool completely before slicing.
Notes
Use very ripe bananas with brown spots for the sweetest flavor and best texture.
For extra fun, bake in a muffin tin for mini banana bites!
Store in the fridge for up to 4 days or freeze for longer storage.
