- 1 packet taco seasoning mix (or homemade taco seasoning)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes with green chilies (like Rotel)
- 1 cup frozen corn, thawed
- 1 (10 oz) bag Fritos (original or chili cheese flavor)
- 2 cups shredded Mexican blend cheese
Optional Toppings:
- Chopped lettuce
- Diced tomatoes
- Sliced black olives
- Sour cream
- Sliced jalapeños
- Guacamole or avocado slices
- Fresh cilantro
Instructions
- Preheat the Oven
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray. - Cook the Ground Beef
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease. Stir in the taco seasoning, adding water as directed on the package. - Prepare the Filling
Add the black beans, diced tomatoes with green chilies, and corn to the skillet. Stir well and cook until everything is heated through. - Layer the Casserole
Spread half of the Fritos evenly on the bottom of the prepared baking dish. Spoon the beef mixture on top, spreading it evenly. Sprinkle the shredded cheese over the beef layer. - Bake the Casserole
Bake the casserole in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. - Add More Fritos and Serve
Sprinkle the remaining Fritos on top just before serving. Add your favorite toppings like lettuce, tomatoes, and sour cream, and serve immediately!
Notes
- Keep the Fritos Crunchy: Add the top layer of Fritos just before serving to keep them fresh and crispy.
- Spice It Up: For a spicier dish, use hot taco seasoning or add diced jalapeños to the beef mixture.
- Make It Vegetarian: Swap the ground beef for plant-based crumbles or extra beans for a meat-free version.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven, adding fresh Fritos for crunch.
- Freezer Tip: Freeze the casserole (without the Fritos on top) for up to 3 months. Thaw and reheat before serving.
