Description

A moist, flavorful twist on classic banana bread with mashed sweet potato and warm spices—perfect for cozy mornings.


Ingredients

Scale

1 cup mashed sweet potatoes

1 cup mashed ripe bananas

½ cup granulated sugar

½ cup brown sugar

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

1½ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp nutmeg (optional)

½ cup chopped nuts or chocolate chips (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×5″ loaf pan.

2. Peel, cube, boil and mash sweet potato; let cool.

3. Mash bananas and combine with sweet potato.

4. Stir in sugars, oil, eggs, and vanilla until smooth.

5. Whisk dry ingredients (flour, soda, powder, salt, spices) in separate bowl.

6. Fold dry into wet until just combined; add nuts or chips if desired.

7. Pour batter into pan and bake 50–60 minutes until a toothpick inserted in center comes out clean; cool before slicing.

Notes

Do not overmix to keep the bread tender.

Substitute applesauce or coconut oil for vegetable oil.

Swap in gluten-free flour for a GF version.
