Description

Bright, moist, and sweet—this Starbucks Lemon Loaf Cake is an easy, bakery-style recipe full of real lemon flavor and rich, buttery texture.


Ingredients

Scale
  • 1½ cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ tsp lemon extract

  • Zest of 1 large lemon

  • 2 tbsp lemon juice

  • ⅓ cup buttermilk (or sour cream)


Instructions

  • Preheat oven to 350°F. Grease loaf pan.

  • Mix flour, baking powder, baking soda, and salt.

  • Cream butter and sugar. Add eggs, vanilla, lemon extract, zest, and juice.

  • Alternate adding flour mixture and buttermilk.

  • Pour into pan. Bake 45–50 min.

  • Cool, then glaze if desired.

Notes

Sour cream can sub for buttermilk. Let cake rest overnight for better flavor. Glaze optional: 1 cup powdered sugar + 2 tbsp lemon juice.
