Ingredients

1½ cups all-purpose flour

½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ tsp lemon extract

Zest of 1 large lemon

2 tbsp lemon juice

⅓ cup buttermilk (or sour cream)
Instructions

Preheat oven to 350°F. Grease loaf pan.

Mix flour, baking powder, baking soda, and salt.

Cream butter and sugar. Add eggs, vanilla, lemon extract, zest, and juice.

Alternate adding flour mixture and buttermilk.

Pour into pan. Bake 45–50 min.

Cool, then glaze if desired.
Notes
Sour cream can sub for buttermilk. Let cake rest overnight for better flavor. Glaze optional: 1 cup powdered sugar + 2 tbsp lemon juice.
