Description
This Spiced Pumpkin Cake with Greek Yogurt Swirl is moist, warmly spiced, and swirled with creamy Greek yogurt. A cozy autumn dessert perfect for gatherings or everyday snacking.
Ingredients
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 ½ tsp pumpkin pie spice
¼ tsp salt
1 cup pumpkin purée (not pumpkin pie filling)
½ cup brown sugar
½ cup granulated sugar
½ cup neutral oil (canola or vegetable)
2 large eggs
1 tsp vanilla extract
¾ cup plain Greek yogurt
2 tbsp sugar
1 egg yolk
½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment.
2. In a bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
3. In another bowl, whisk pumpkin purée, sugars, oil, eggs, and vanilla until smooth.
4. Fold dry mixture into wet mixture until just combined.
5. Mix Greek yogurt, sugar, egg yolk, and vanilla for the swirl.
6. Spread pumpkin batter in the pan, dollop yogurt mixture on top, and swirl with a knife.
7. Bake for 35–40 minutes, or until a toothpick comes out clean.
8. Cool before slicing and serving.
Notes
Store at room temperature for 2 days, or refrigerate up to 5 days.
Freeze individually wrapped slices for up to 2 months.
