Description

A deeply flavorful layer cake featuring coffee, cardamom, and warming spices—perfect for fall gatherings or elegant dinners.


Ingredients

Scale

2 ½ cups all‑purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ tsp ground cardamom

1 tsp ground cinnamon

½ tsp ground ginger

¾ cup unsalted butter, softened

1 cup brown sugar

½ cup granulated sugar

3 large eggs

1 tbsp vanilla extract

1 cup brewed espresso, cooled

1 cup sour cream or Greek yogurt


Instructions

1. Preheat oven to 350°F and prepare pans.

2. Whisk dry ingredients together.

3. Cream butter and sugars until fluffy.

4. Add eggs and vanilla.

5. Alternate adding dry mix and espresso/sour cream.

6. Bake 25–30 minutes or until done.

7. Cool 10 minutes in pans, then fully on rack.

8. Frost as desired and chill before slicing.

Notes

Bring butter and eggs to room temperature.

Don’t overmix batter for a tender crumb.

Use 2×9″ pans if you don’t have three 8″ pans.

Cake layers freeze beautifully for future use.
