Description
These cozy Pumpkin Spice Cake Bars are moist, warmly spiced, and naturally sweetened with honey. Topped with a creamy frosting, they’re the perfect fall dessert or snack.
Ingredients
200 g pumpkin purée
150 g whole wheat flour
80 g honey
1 large egg
2 tbsp olive oil or melted butter
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
2. Whisk pumpkin, honey, egg, and oil until smooth.
3. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
4. Fold dry ingredients into wet mixture until just combined.
5. Bake 20–25 minutes, until a toothpick comes out clean.
6. Cool completely before frosting.
Notes
Optional: Add nutmeg or cloves for a stronger spice flavor. These bars freeze well and taste even better the next day.
