Ingredients
Scale
For the Cake:
- 1 can (20 oz) crushed pineapple (with juice)
- 2 eggs
- ¼ cup oil
- 1 cup sugar
- ½ cup brown sugar
- 2 cups flour
- 2 teaspoons baking soda
- ½ teaspoon salt
For the Icing:
- 1 can (12 oz) evaporated milk
- ½ cup butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- ½ cup chopped pecans or walnuts (optional)
Instructions
- Preheat & Prepare – Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Mix the Batter – In a large bowl, whisk together eggs, oil, sugar, and brown sugar. Stir in crushed pineapple with juice.
- Combine Dry Ingredients – In a separate bowl, whisk flour, baking soda, and salt. Gradually fold the dry mixture into the wet ingredients, stirring until just combined.
- Bake the Cake – Pour the batter into the prepared baking dish and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the Icing – In a saucepan over medium heat, combine evaporated milk, butter, and sugar. Stir until the mixture thickens slightly (about 5 minutes). Remove from heat and stir in vanilla, shredded coconut, and nuts (if using).
- Soak & Serve – While the cake is still warm, poke small holes all over the top with a fork. Pour the warm icing over the cake, letting it soak in.
- Cool & Enjoy – Allow the cake to cool before slicing. Serve as-is or with whipped cream or ice cream!
Notes
- Toasted Coconut – Toast the shredded coconut before adding it to the icing for a deeper, nuttier flavor.
- Make Ahead – This cake tastes even better the next day as the flavors meld! Store in the fridge for an even moister texture.
- Nut-Free Option – Skip the pecans or walnuts if you prefer a nut-free version.
- Serving Suggestion – A scoop of vanilla ice cream or a drizzle of caramel sauce takes this cake to the next level!
